Green Fried Tomatoes and Eggs

Our last box of the season is this week and we've been discussing what to do with all the green tomatoes still on the vine.  We might just put them in the boxes for fun.

So if you've never had green fried tomatoes, here's an easy breakfast dish with them.


Slice them all up.

Fry them covered on medium heat for about 6 minutes.

Add some water if they've dried out too much.


Crack a couple eggs over the top, cover and let the eggs cook.


When done, put them over toast and enjoy!


This dish won't win any beauty contests, but it does leave you wanting more.

Food Waste


After talking with many of our subscribers this year, we've heard some of you can't finish all the food and it feels wasteful.

We sent out a letter to our subscribers on this topic. It can be read here:

In summary though:
In the normal food system 52% of all vegetable produce is wasted going from
the fields, to a distributor, to a supermarket, to your refrigerator, to your fork.

At Ananda Valley Farm we waste virtually none of the produce we grow, it all either goes to our subscribers, used by volunteers, or is donated to charities.

So even if you are not able to use up to 1/2 of your box, it is still wasting less than purchasing food through a supermarket.

Box Value


The harvests this year in November and October have been abundant. Usually October is the month everything tapers off.  Our warm fall has extended many of the crops.

We decided to see what the value of our boxes were compared to shopping at Whole Foods.
Since we had posted pictures for two weeks of boxes in October, we used these ones to compare.
